The Ideal Diner

If you could name traits of the ideal diner/guest, what would they be and why?

The ideal guest is looking for a relaxing dining experience, likes trying new and interesting foods and is courteous.

Somebody who enjoys food and wine, and is not afraid to taste something they didn't try before. They should be educated about what kinds of restaurants there are (fine dinning, gastropub, casual, cheap, bar, fast food, etc.). They should be tolerant about the fact not every one has the same palate. Leave a fair tip for the work that has been done.

A guest should be game to try something new and listen to suggestions. They should be respectful and friendly towards the staff. And they should want to spend the evening enjoying the food, rather than judging it. I want to hear a room full of laughter and clinking glassware; iphones, cameras and texting about the food takes the guests away from the moment and adds an element of work. Enjoy it now, talk about it later.

I think it is great when a guest is willing to try anything. Recently we offered Sea2Table amberjack, which is a delicious sustainable fish. It is also a fish that not many people are familiar with by name. So it's nice when people are willing to trust my skills and let me lead.
