To celebrate Easter, NAHA Pastry Chef Craig Harzewski will offer complimentary housemade Peep mignardises, the first time the restaurant will offer the little marshmallow chicks. "The Peeps are a family favorite," says Executive Chef Carrie Nahabedian. "Craig made them for Michael and my sisters for fun and then everyone went crazy for them and now they are being made daily."
"They are fun and easy to make," Harzewski says. "Everyone has some attachment or memory of Peeps from their childhood -- even if they don't celebrate the Easter holiday. It is a true sign of spring when the commercial Peeps show up on store shelves. During production everyone in the kitchen seems to be in a better mood."
The treats are housemade marshmallow piped out using a round tip, hand-shaped, then dusted with yellow-colored granulated sugar. And the eyes are painted on with coffee extract. The miniature chicks are about the size of a quarter and are offered by the servers at the end of the meal at lunch and dinner. The Peeps will be available through Easter.
